Burritos or Quesadillas are easy meals, because you can throw pretty much anything into a tortilla and make lunch or dinner out of it. This recipe may not be universally accepted as tuna, olives, and tomatoes are commonly found on individual "will not eat" lists. But the point of this recipe is less about following it to a "T," and more about thinking how you can add ingredients you like to a simple protein to jazz it up.


  • 1 can of tuna
  • 1 tbsp mayo
  • a handful of olives diced
  • 1/2 tomato diced
  • 3 flour tortillas


  1. Mix tuna with mayo. Add tomato and olives. Mix together.
  2. Add tuna mixture to tortilla and roll up.
  3. Spray a skillet with cooking spray. Place burrito in skillet and cook about 2 minutes on each side.
