The Entrée Salad

This recipe puts salad front and center at the dinner table by adding a little warmth and a powerful punch of flavor with the sweet and savory addition of sautéed apple chicken sausage.

*Serves 4*


  • 1 package sausage (apple chicken sausage)
  • 2 zucchini
  • 1 block feta cheese
  • 2 ½ cups orzo pasta (cooked)
  • 2 hearts of romaine lettuce

Kitchen Staples

  • Olive Oil
  • Lemon


- Cut sausage into medium slices (diagonal cuts)
- Dice zucchini (medium size)
- Crumble feta
- Tear romaine lettuce into smaller piece


- Sauté sausage in a skillet with olive oil
- Put sausage from the skillet aside
- Add zucchini to the same skillet and sauté with olive oil and add a dash of salt & pepper
- Turn stove off
- Just before removing skillet toss in orzo and stir once
- Add crumbled feta and stir once
- Pour warm ingredients into bowl and add sausage
Optional: Squeeze fresh lemon and add a drizzle of olive oil
