Being that eggs play a significant roll in Easter, deviled eggs have become a popular appetizer to serve at this time of year. The eggs are a traditional symbol of spring fertility and rebirth.
- 6 eggs, hard-boiled
- 1 Tbsp. lemon juice
- ¼ cup mayonnaise
- ¼ tsp. salt
- 1/8 tsp. pepper
- ½ tsp. dry yellow mustard
- Halve the 6 eggs lengthwise. Press yolks through a food sieve or mash with a fork. Reserve whites.
- Blend yolks, lemon juice, mayonnaise, salt, pepper, and mustard.
- Spoon the filling into egg white halves. Sprinkle with paprika. Chill until ready to serve.
- Makes 12 Halves
