Breakfast in bed might be the most popular Mother's Day of all - and for good reason! We think that every mom could use a relaxing day in bed or at least a meal there where she doesn't have to worry about the cooking and eventual cleaning. We have some simple breakfast treats - one sweet and one healthy - for mom to enjoy!
Mini German Pancakes
Ingredients: 6 eggs, 1 cup flour, 1 cup milk
Directions: Preheat your oven to 425 degrees F. Mix together eggs, flour and milk (optional: add a dash of salt). Pour batter into a non-stick cupcake pan. Bake for 20-25 minutes. Serve with lemon juice and powdered sugar, or syrup if you choose.
Egg Cups With Parmesan And Kale
Ingredients: Kale, eggs (however many “cups” you’re planning to make), parmesan
Directions: Preheat your oven to 375 degrees F. Tear off large leaves of kale from the stem. Steam the kale until it’s slightly wilted. Place the kale leaves in a muffin tin, one large leaf per cup or layer small leaves. Crack an egg into each kale-covered cup. Sprinkle with parmesan and season with salt and pepper. Bake for 20-25 minutes.
