Easy Holiday Recipes for Busy Moms

easy-holiday-recipes-for-busy-momsThe holiday season is upon us. Whether you celebrate a Christian Christmas, a more multi-cultural Christmas, Winter Solstice, Hanukkah, Kwanzaa, or even New Years, the odds are pretty good that there will be some partying going on in your life this time of year.

I thought I'd share a couple of my favorite holiday recipes with you, in case you are called upon to host or contribute to a holiday party. These recipes are quick, easy, and delicious – great for busy moms during the holidays – or any time for that matter!

I'd also love to hear from you with your favorites!

Holy Dip

  • 1 package cream cheese
  • 1 500g container asiago & artichoke dip
  • 1 clove garlic, crushed
  • ¼ cup parmesan cheese
  • ¼ cup mozzarella or cheddar cheese
  • ¼ cup salsa (optional)

Blend everything together in a food processor. Cook for 15 minutes at 350 degrees. Serve with nacho chips or bread.

Crab Dip

Blend together:

  • 1 brick cream cheese
  • ½ cup sour cream
  • ¼ cup miracle whip
  • 1 cup artificial crab

Mix all together in food processor

Spread dip on a plate and top with seafood sauce, grated mozzarella, diced tomato & onion. Serve chilled with Ritz or other crackers.

And, for all that leftover turkey you are liable to have, here's a great turkey chowder.

Turkey Chowder

Saute:

  • 1 chopped onion
  • 2 stalks of celery, chopped
  • 3 tbsp butter

Add:

  • 2 tbsp flour
  • ½ tspn salt & pepper
  • 3 cups milk or cream
  • 2 cups turkey broth
  • 2 carrots, chopped
  • 1 pkg frozen mixed vegetables (or leftover veggies)
  • 1 cup diced turkey meat

Now, the decadent part – before serving, add 1 cup of Velveeta cheese (or creamy cheese of your choice). And let's not forget about dessert...

Raspberry Squares

Mix together:

  • 1 cup flour
  • 1 tbsp milk
  • 1 egg
  • 1 tspn baking powder
  • ½ cup butter
  • Roll to 9x13 pan size, and sit in pan. Top with raspberry jam.

Mix together:

  • 1 cup sugar
  • ¼ cup melted butter
  • 1 tspn vanilla
  • 1 egg

Spread over jam and bake at 350 degrees for 25 minutes

Enjoy your holiday season! For those of you who are concerned about the fat and calories in some of these dishes, just remember what a very wise person once told me – it's not what you eat between Christmas and New Years that causes problems, it's what you eat between New Years and Christmas!
