Zucchini breadZucchini looks like cucumbers, but it's got a great flavor all on its own. 

To prepare your zucchini, just wash the outside well (usually no need to peel it) and remove any bigger seeds. Then just grate it with a cheese grater, and you're ready to try these delicious zucchini recipes!

Zucchini Bread

Mix together:

  • 3 cups all purpose flour
  • 1 1/2 cups sugar
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 tsp. baking powder
  • 3/4 tsp. baking soda

Then add:

  • 2 cups grated zucchini
  • 3 eggs
  • 1 cup oil
  • 1 cup raisins or chocolate chips for those who don’t like the raisins (semi-sweet or milk)

Mix until blended on low speed or with spoon. Bake in a 9x5 greased and lightly floured loaf pan at 350 for 1 hour 30 minutes.

Chocolate Brownie Zucchini Cake

This is a moist and heavy cake that can be eaten as is or topped with melted chocolate or your favorite frosting - delicious!

Mix together:

  • 2 cups all purpose flour
  • 2 cups sugar
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • ¾ cup cocoa powder

Then add:

  • 4 beaten eggs
  • 1 ½ cup of oil or applesauce
  • 3 cups grated zucchini


  • 1 cup chocolate chips (semi-sweet or milk)

Bake in a 9 x 13 greased and lightly floured pan at 350 for 50 to 60 minutes. Your cake is done when a toothpick comes out clean. Eat as is, or top with your favorite chocolate frosting or drizzle melted chocolate on top.
