Homemade marshmallows have become popular at local farmers markets. With this recipe you can make your own flavored marshmallows that are perfect for parties or just to have handy for cold nights of sharing hot chocolate.
• 8 oz. eggnog
• 4 packets unflavored powdered gelatin
• 8 oz. honey
• 3/4 cup sugar
• 1 teaspoon of salt
•1/8 tsp. ground nutmeg
• 1/2 cup confectioners' sugar
Grease baking dish.
In a stand mixer bowl, pour 4 ounces of eggnog.
Sprinkle gelatin over egg nog and combine; let sit for about 5-6 minutes.
In a saucepan over medium-high heat, combine remaining eggnog, honey, sugar, nutmeg and salt until combined.
Heat to a boil, stirring occasionally.
Pour mixture into stand mixer bowl and beat, gradually raising speed.
Beat until fluffy, about 5 minutes.
Pour into greased baking dish and smooth. (Spraying the spatula with cooking spray will make it easier to smooth the marshmallow mixture.)
Refrigerate for at least 6 hours, preferably overnight.
When marshmallows have set, sift confectioners' sugar onto a workspace.
Un-mold the marshmallows onto the sugar and cut into squares. (Dust the knife in confectioners' sugar for easier cutting.)
Roll the marshmallow squares in confectioners' sugar to coat.
