Gluten-Free Blueberry Bacon Pancakes

There are so many traditional recipes on the web that your family might expect you just to make the classic pancakes and eggs because that’s what you are familiar with. So what about wow-ing them with one of the beloved ingredients during breakfast time: bacon.

This original blueberry pancake recipe is not only gluten-free, but it also has bacon bits intermixed with blueberries and smothered in homemade blueberry sauce instead of syrup. Delicious!

Ingredients for Gluten-Free Pancakes

  • 1 c almond milk
  • 1 c water 
  • 2 eggs, beaten 
  • 4 tbsp organic coconut oil 
  • 1 tbsp honey 
  • 1 tsp vanilla extract 
  • 1 3/4 c sorghum flour
  • 1/4 c almond flour 
  • 1/4 c tapioca starch
  • 1 1/2 tsp baking powder
  • 3/4 tsp xanthan gum
  • 2 handfuls of fresh blueberries
    (*surprising note about xanthan gum: this ingredient can be dangerous for pets, so keep your cakes away from hungry furry friends!)
  • 5 to 6 strips of bacon (cooked and crumbled)

Directions

  1. Heat greased pan on medium-high on the stove.
  2. Combine all dry pancake ingredients in a large bowl.
  3. Dig a hole in the center of the dry ingredients and then pour each of the liquid ingredients, then whisk together.
  4. Use a spatula after whisking to really beat the ingredients together.
  5. Add bacon and then add blueberries in batter, folding them in with a spatula. The pancake batter should be creamy. If too thick, add more water to weaken.
  6. Using either a large soup spoon or a ladle, pour the batter onto hot pan for your first pancake.
  7. Do not flip until you see bubbles on top of the pancake. When little bubbles appear, flip.
  8. Lift the pancake’s edge with a spatula to see if one side is browned yet. If browned, then flip with spatula and cook for another 2 minutes, then remove from pan to start your next pancake

Blueberry Sauce Ingredients

  • 3 handfuls of fresh blueberries
  • 1/4 c of almond milk or regular milk
  • 3 tbsp of sugar

Blueberry Sauce Directions

  1. Heat up small pan on oven on medium-high heat.
  2. Add blueberries and let them warm for a few minutes, stirring not to burn them.
  3. Mash up blueberries with a spoon or some flat head utensil.
  4. Add milk and stir then add sugar and stir.
  5. Keep stirring until you have a creamy syrup with small chunks of blueberry.

Seriously, you should make this for your next weekend breakfast. It's delicious!!
