Wanting to impress your Valentine's Day date with an absolutely perfect and delicious feast? It is actually a lot easier than it may sound. Check out this simple and extra flavorful menu to help inspire you on how to make your own 5-course Valentine's Day meal at home!

Course 1: Herb-Roasted Tomatoes

Ingredients

  • 4 Roma tomatoes, halved lengthwise
  • 1/4 cup grated Parmesan
  • 1/2 teaspoon dried oregano
  • 1 clove garlic, chopped finely
  • dash salt
  • dash pepper
  • 2 teaspoons olive oil

Directions

  1. Preheat oven to 425 degrees and line tomatoes on foil-covered baking sheet, cut side up.
  2. Combine ingredients in a small bowl. Spoon mixture on tomatoes evenly.
  3. Bake for 20 minutes, or until the tops turn golden brown. Serve hot.

Course 2: Silky Butternut Squash Soup

Ingredients

  • 3-4 cups cubed butternut squash
  • 1/2 red bell pepper, chopped
  • 1/2 yellow onion, chopped
  • 3 cloves garlic, peeled and chopped
  • 4 cups water
  • dash salt
  • 1 tablespoon sugar (more if needed)
  • 1/4 - 1/2 cup heavy cream

Directions

  1. In a large pot, combine all ingredients except for the heavy cream, bring to a boil, cover and let simmer for 30-40 minutes.
  2. Let cool slightly, and in even batches, puree in a food processor or blender. (If mixture is still steamy and hot, leave opening in processor or blender to allow steam to escape.
  3. Return to pot, stir in heavy cream, and simmer once more. Season to taste and serve hot.

Course 3: Apple Walnut Salad

Ingredients

  • 4 cups baby spinach
  • 1 Honeycrisp apple, cored and sliced
  • 1 Granny Smith apple, cored and sliced
  • 3/4 cup walnuts, roughly chopped
  • 1/3 cup crumbled feta cheese
  • (dried cranberries optional)

Directions

  1. Toss ingredients in a large bowl.
  2. Drizzle preferred dressing over salad and lightly toss.

Sweet Vinaigrette (optional)

  • 1/2 cup apple juice
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • dash salt
  • dash pepper

Course 4: Red Wine Filet Mignon

Ingredients

  • 2 6-ounce filet mignons, cut 1 1/2 inches thick
  • coarse ground black pepper
  • coarse salt
  • 2 teaspoons olive oil
  • 1 cup dry red wine
  • 2 tablespoons butter

Directions

  1. Season both sides of filets with salt and pepper (pat firmly).
  2. Heat up oil in a skillet over medium high heat until hot. Add filets and reduce heat slightly to a medium heat. Cook filets as desired. (Approximately 10-13 minutes for medium.)
  3. In a saucepan, boil wine for about 8-10 minutes until it is reduced to 1/4 cup. Remove from heat and add butter. Stir until butter is melted and the mixture thickens. Season with salt and serve over filets.

Course 5: Salted Caramel Chocolate Lava Cake

Ingredients

  • 1 cup dark chocolate, chopped
  • 2 tablespoons butter, unsalted
  • 2 teaspoons sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 egg
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • salted caramel sauce

Directions

  1. Preheat oven to 400 degrees.
  2. Using a double boiler, or glass bowl over a saucepan of boiling water, melt the chocolate and butter. Once melted and combined, remove from heat.
  3. In a separate bowl, sift together sugar, flour, and baking powder. Set aside.
  4. To the chocolate mixture, add in egg, milk, and vanilla. Mix until incorporated. Add in dry ingredients and mix until smooth.
  5. Pour batter evenly into two ramekin dishes. Add a tablespoon of salted caramel sauce to the center of each dish.
  6. Place ramekins on a baking sheet to avoid overflow in the oven and bake for 15 minutes. Once finished, flip cake out of ramekin onto a plate and serve.
