Fall means pumpkin time!

Throughout the season, I'll see people enjoying all kinds of pumpkin treats, from lattes and pies to egg nog and even coffee creamers! I could go on and on. One of my favorites is Pumpkin French Toast, which is a great way to start the day. Enjoy and pass it on to your friends!

This recipe offers bread coated with a spiced pumpkin mixture which highlights the French toast. One-fourth teaspoon allspice can also be added if you want more of a spice flavor!

Ingredients:

  • 2 eggs
  • ½ cup milk
  • ½ cup pumpkin puree
  • ½ tsp. vanilla extract
  • ½ tsp. cinnamon, 1/4 tsp. nutmeg,
1/4 tsp. ground ginger
  • 1 Tbsp. sugar
  • 9 slices bread, challah, brioche or whole wheat
  • ¼ cup butter

Optional:

  • Powdered sugar
  • Maple syrup, warm
  • Fresh fruit or apple sauce

Serves: 3


Directions:

In a medium bowl, mix eggs, milk, pumpkin puree, vanilla, spices and sugar. Soak each bread slice for about 30 seconds on each side. Melt butter in a skillet and cook the bread on medium-high heat until browned on both sides, 3 to 4 minutes per side.

Top with your favorite toppings or put some sauce in between slices, and serve!
