21 Day Challenge Day 3: Slow Cooker Chili

The beauty of a slow cooker that it makes a lot of food and you can forget about it for several hours while it cooks. Chili is a great comfort food that works for a big party or as meals to freeze and take for lunch. 

Ingredients

  • 1 tablespoon olive oil
  • 1 lb lean ground beef
  • 1 lb Italian sausage
  • 1 15 oz can kidney beans
  • 1 15 oz can pinto beans
  • 2 red peppers, diced
  • 1 onion, chopped
  • 1 15 oz can diced tomatoes
  • 1 8 oz can tomato sauce
  • 1 6 oz can tomato paste
  • 2 cloves garlic
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin

Directions

  1. In a large skillet, heat olive oil. Add onion and cook until the onions start to become translucent. 
  2. Add the ground beef, then the Italian sausage, and cook until meat is brown.
  3. Remove meat and onion from heat and add to slow cooker.
  4. Add the rest of the ingredients to the slow cooker. Stir and add the lid.
  5. Cook on low heat for 8 hours or on high for 4 hours.
